New Fav Cookie Recipe

Peanut butter Stuffed Chocolate Cookies

Earlier this week I shared a new cookie on my story, and I decided that I would share the recipe here on the blog!


The Filling

Ingredients

3/4 cup powdered sugar

3/4 cup creamy peanut butter


Step 1 - Combine powdered sugar and peanut butter in a medium mixing bowl and stir until evenly mixed. *Once it started sticking together I started kneading it with my hands and finally got it to the right consistency.*


Step 2 - Create 1 inch balls of the mixture and put them on a lined baking sheet or plate. Place them in the freezer while you make the dough.


The Dough

Preheat your oven to 350

Ingredients

1/2 cup butter, room temperature

1/4 cup peanut butter

1 cup light brown sugar

1 teaspoon vanilla

1 egg + 1 egg yolk

1/2 cup cocoa powder

1/2 teaspoon kosher salt

1/2 teaspoon baking soda

1 1/2 cups flour

1/4 cup granulated sugar


Step 1 - Mix together room temperature butter, peanut butter, and brown sugar for 2 minutes until its light and creamy. Scrape the sides of your bowl and add in vanilla, egg and egg yolk, cocoa powder, salt, and baking soda. Mix on medium speed for one minute or until smooth


Step 2 - Mix on slow speed adding in the flour a half cup at a time. Mix until combined


Step 3 - I preheated my oven and put the dough in the fridge and cleaned up the kitchen, the dough was easier to work with once it was chilled.

Step 4 - Take your peanut butter balls out of the freezer & the dough out of the fridge. Take out a heaping spoonful of dough place the peanut butter ball in the center, work the dough around the ball until it is completely covered. Then roll the ball in granulated sugar and place on cookie sheet. Flatten cookies with the back of your spoon. Bake for 9-11 minutes at 350.
